Great Vegan Baking
Baking is everywhere at the moment: on TV, in magazines, even on chat shows, but the recipes are usually laden with butter, eggs and cream. So how does this baking frenzy fit into a vegan lifestyle? It's all about finding delicious and healthy alternatives.
Earlier this week I wrote about Essential Vegan Alternatives to dairy, eggs, gelatine and honey. Some ingredients, like soya milk and yoghurt, might be available at your supermarket but others, such as flax seeds and agar agar, could require a trip to a health food store. You'll find the best range of ingredients there and knowledgeable staff to point you in the right direction. Once you have the ingredients you're all set to start baking! Here are some of my favourite vegan bakes:
- Cashew and Berry Cheesecake
- Orange and Almond Cake
- Chocolate Courgette Cake
- Carrot and Date Cake
- Sticky Toffee Pudding
- Chocolate Fudge Cake
The sticky toffee pudding and chocolate fudge cake stayed on the menu of Demuths, my vegetarian restaurant (now called Acorn), for over 20 years as they were consistently popular. But eating baked goods and sweet treats in restaurants can be a minefield for vegans. Desserts are not often even labelled vegetarian, let alone vegan. When in doubt, check with your server.
I hope you're inspired to give vegan baking a try. If you're interested in learning more about vegan cooking, we regularly run our very popular Vegan Diploma courses and lots of great vegan classes.
