Baking without eggs and dairy can seem daunting at first, but it needn't be, in fact it is often easier to make a vegan cake than a dairy based equivalent.

From pastries and doughs to sticky puddings and cakes, join us for a delicious day of all things sweet.  

Course Details

We will give you top tips on how to replace eggs and dairy in your recipes, showing you how to make the lightest sponge cakes and luxurious treats. Introduce you to aquafaba, flax and chia batters and show you how to make vegan meringues and lighten up your baking.

Learn some fundamental recipes that will enable you to go home and feel confident to make a whole variety of different flavoured vegan bakes.

We will make recipes such as:

  • - Almond Amaretti
  • - Sticky Toffee Pudding
  • - Cinnamon Rolls
  • - Orange and Almond Cake
  • - Aquafaba Meringues
  • - Chocolate Avocado Mousse
  • - Chocolate Chia Brownie

We will also focus on great flavour combinations and variations and chefs tips to save time and increase your confidence in the kitchen.

The course involves a mixture of demonstrations and hands-on cookery, and is led by our experienced chef tutors who can answer all of your vegan baking questions.

There will be lots of cooking, but also plenty of conversation, tasting, fun and a savoury lunch. You will leave with a comprehensive recipe pack.

Time: 10am - 4.00 pm

Lydia comes from a food loving family and learnt to cook from an early age with her Chinese mother. She has spent all her working life involved with food.  Lydia is an excellent teacher, with a wealth of knowledge and creativity to impart alongside a warm personality.
