Rachel's Tomato Sauce
This is a very simple quick tomato sauce flavoured with cinnamon. Ideal for a pasta sauce or thicken down for a pizza topping.

Ingredients
- 1 onion, finely sliced
- 1 tbsp olive oil
- 2 garlic cloves, finely chopped
- 200ml vegetable stock
- 4 ripe tomatoes, finely chopped
- 1/2 cinnamon stick
- pinch of salt and freshly ground black pepper
Method
- Fry the onion in the olive oil for a few minutes to soften then add the garlic. Fry for another minute.
- Add the vegetable stock and tomatoes. Then add the cinnamon stick and simmer for about 25 minutes until the tomatoes have broken down and reduced to a thick sauce.
- Remove the cinnamon stick and season to taste. Leave slightly chunky or blend to a smooth consistency.
