Irish Soda Bread
We love this bread because it’s so easy to make and easily adaptable. We’ve had great success with gluten free flour, rye flour, spelt flour, whole meal flour, and good old-fashioned white flour. And the add-ons are virtually endless: seeds, nuts, cheese, fruit, sundried tomato, herbs, whatever you fancy. Irish Soda Bread is traditionally made with buttermilk, but we use milk and yogurt instead (or soya milk and soya yoghurt for our vegan friends).

Irish Soda Bread
Dietary: Vegan and Gluten Free Options
Makes 2 small loaves or 8 rolls.
Ingredients:
- 500g flour
- 6 tsp baking powder
- ½ tsp sea salt
- 350ml milk or soya milk
- 75ml plain yoghurt or soya yoghurt
- 1 Tbsp soft brown sugar
Method:
- In a saucepan, heat the milk, yoghurt and sugar. Stir until the sugar has dissolved.
- Mix the flour, baking powder and salt together in a large bowl.
- Pour the milk mixture into the flour mixture and mix into a sticky dough.
- Tip onto a floured surface and portion into whatever size you want.
- Shape each portion into a ball and cut a deep cross in the top of each ball and dust with flour.
- Bake at 210C for 15-30 minutes (depending on size).
Tips:
Soda bread dries out quickly so it’s best eaten warm straight from the oven.
