The course is suitable for those just beginning a vegan diet and for those who want to expand their vegan repertoire and immerse themselves in a fun and informative week long food experience. 

The Vegan foundation course will set you up with the fundamentals of vegan cooking, covering basic nutritional information, tailored for vegans and for those who want to reduce the amount of dairy and eggs in their diets.

Course Details

Time: 9.30am - 4:30pm every day

Over five days, you will learn:

  • Perfect knife skills
  • Use seasonal vegetables in imaginative ways
  • Learn about and how to use vegan ingredients
  • Get to grips with all the fantastic dairy alternatives
  • Work with tofu and tempeh
  • How to create a healthy balanced vegan diet with nuts, seeds, grains and pulses
  • Master vegan sauces
  • Make fabulous vegan biscuits and pastries
  • Create lush moist cakes and puddings

All of our dishes are made from the best of what’s in season, be they our own garden produce, wild food or vegetables from one of our fantastic suppliers, Eades and Castle Farm Organics.

The course will be hands-on cookery working in small groups, with skills demonstrations, and is led by our experienced chef tutors who can answer all of your cooking questions. 

We will also focus on chefs tips to save time and increase your confidence in the kitchen. 

There will be plenty of time for questions, conversation and tasting. 

The course includes lunch every day that you will have cooked.

You will receive a Demuths Certificate in Vegan Cooking on successfully completing the course and a comprehensive set of recipes.

This 5 day introductory course in vegan cooking will set you up to continue with the Demuths Vegan Diploma.

All the teachers were brilliant, very patient, very informative, with lots of little hints and tips.

Oh, such an absolutely lovely group of people! I am paticularly impressed, naturally besides the cooking skills, with the patience and "human management" skills of Lydia. I really admired how she was capable to cheerfully help and please such a diverse and demanding group as we were. I also appreciated her openness and flexibility towards our interests.

The only disappointment for me is that the course is over
