How it works –

  • We would say a box serves 1 but maybe we are greedy! 
  • £10 per box
  • Orders need to be placed by midnight 2 days prior to the date (i.e place your order by midnight Thursday 19th November)
  • The day before we get cooking we will email you with your own collection time on Saturday (between 9am and 11am) so you can safely come and get your delicious treats from us at the Cookery School.

    We are very excited to introduce Demuths at Home.

    Now that we are back in the kitchen delivering our classes, we don’t want to leave! And so, over the next few weeks we will be giving you a taste of Demuths to enjoy at home.

    Each week (or nearly each week... we are fitting them in the diary where we can!) we will be cooking up some of our favourite cuisines from around the world.

    Course Details

    How our food collection works –

    • Each meal cost £20 and is enough for one person.
    • Orders need to be placed by midnight 2 days prior to the date (i.e place your order by midnight Thursday 19th November).
    • When booking you will be asked to let us know of any dietary requirements beyond vegan - most meals can be altered accordingly. Unless stated everything is gluten free. Let us know if you’d rather we turned down the spice or left out the fresh coriander. Please note we are not a nut free or gluten free kitchen. Sorry, no substitutions or additions.
    • The day before we get cooking we will email you with your own collection time (between 4pm and 6pm) so you can safely come and get your delicious dinners from us at the Cookery School.
    • Each dish will include reheating instructions.

                Join forager Christopher Robbins on a forage around Bath, which will teach you how to identify the marvellous array of edible and medicinal plants available at this time of year.

                Course Details

                Novices to experienced foragers. Foraging expert and Medical Herbalist, Christopher Robbins, takes you around the edges of the city, up the beautiful canal, onto the river meadows.

                He will show you plants that heal or are great to eat. You will learn the importance of identification; noting where you are likely to find the best plant species and when; how to cook them or to use as medicines; how to become a safe and confident forager; the importance of checking the identity of new finds before tasting; how to check the identity or plants; how to plan your foraging expeditions.

                Practicalities:

                The day will begin at 10.00am in Bath. The walk will be around Bath and will be 4 hours long, we will be stopping frequently to identify and talk about the edible treasures, wear good footwear and bring protection from the rain. Please bring with you a notebook, camera, something to drink and a snack.

                Children welcome, but no dogs.

                                        The Mexican bowl is a very nutritious with the traditional mix of herby Quinoa with refried beans, tomato jalapeño salsa and avocado mash topped with mango salsa, coriander leaves, slices of jalapeño chilli and tortilla chips.

                                        Japanese Bowl 

                                        Our Japanese bowl is inspired from the Okinawa diet, which is a very healthy diet from the Japanese Okinawa islands where there is one of the highest density of people over 100 in the world. Their diet is based on sushi rice, purple vegetables, tofu, miso, seaweed and pickles. Purple sweet potatoes and carrots are rich in flavonoids, carotenoids, vitamin E and lycopene.

                                                    Ethiopian food is known for it's depth of flavour and richness. Eating vegetarian and vegan in Ethiopia is very common due to fasting days thus creating a large selection of traditional delicious plant-based dishes.

                                                    Course Details

                                                    A traditional Ethiopian meal is served family style on top of sourdough flat bread called injera, made exclusively from teff flour. You will learn how to make injera sourdough starter and cook the delicious flatbread. We will also make a quick injera for busy days.

                                                    We will make Yeqimen Zeyet, a seasoned oil that provides a flavourful base for Ethiopian cuisine. Then we will move on to a Berber spice blend guaranteed to become a faithful companion to your spice cupboard. 

                                                    Lentils and split peas take centre stage, however these kay wot dishes are more of a sauce then a stew. Slowly cooked for intense flavour and a sauce like consistency. We will show you the steps of cooking down the onions to achieve a perfect wot. We will also make a variety of seasonal vegetables based dishes and salad.

                                                      Sichuan cooking is all about a combination of flavours; hot from chillies, numbing from Sichuan peppers, salty, sour, sweet, bitter and smoky. One dish can contain all these disparate flavours. Each dish has its own style, they say in Sichuan a hundred dishes has a hundred different flavours.

                                                      Lydia will teach you all about the essential Chinese store cupboard ingredients and where to buy them.

                                                                  Brinda will give you an insight into traditional multi-cultural Mauritian food. When we talk of culture and traditions in Mauritius, the unique ethnic diversity immediately transpires. Mauritius does not have one culture, but the blending of several cultures and traditions. Mauritian culture is based on the diversity of the population of different customs and traditions stemming from those who, during the last 400 years, have settled on the island’s shores.

                                                                  For a tiny island, Mauritius has an incredibly rich and diverse food culture, influences from its mélange of inhabitants (Creole, French, Chinese and Indian) and the use of spices in my cooking.

                                                                  • Chana Dhal Fritter – famously known in Mauritius as “Gateaux Piments”

                                                                                We will be staying with David and Emma at their fabulous hotel Las Chimeneas in the traditional unspoilt white village Mairena perched on the side of the mountains with beautiful views to the sea and snow-capped mountains behind. 

                                                                                David and Emma have lived in Mairena for 18 years and they are extremely knowledgeable hosts and guides through the history, traditions, fauna, food and people of the area. They have their own finca where they grow organic vegetables, olives and fruit trees.

                                                                                We will cook paella on an open fire, learn how to make goats cheese, pick wild herbs for salads, visit the village olive oil press, picnic in the hills, eat tapas in the local town Ugijar and treat ourselves to hot chocolate with churros.

                                                                                The highlight will be lunch with Chris and Anna Stewart at their farm El Valero, the famous setting for his best-selling book ‘Driving over lemons’.

                                                                                      Join Colette for gluten-free and vegan baking and patisserie and learn the skills to make sourdough, pasta and choux pastry.

                                                                                      This course is taught by expert gluten-free baker Colette Woods. She ran her own bakery in Somerset called Fliip gluten free which makes delicious savoury tarts.  She is an experienced chef and cooked for Peter Gabriel at Real World Studios. Colette became intolerant to wheat and found that by cutting wheat out of her diet, it greatly improved her health.

                                                                                      On the day you will learn how to make a sourdough starter and make sourdough from Collette's family starter. You will also learn how to make an enriched dough to make brioche. We will make a vegan gluten free pasta and with the recipe make lasagne for our lunch and in addition will make ravioli and tagliatelle with a sauce. We will make a choux pastry to make into chocolate eclairs and mushroom gougere. We will make a few nut cheeses which will will use throughout the day. All topped off with a delicous rich chocolate mousse cake.

                                                                                            Ethiopian food is now becoming recognised for it's depth of flavour and richness found in the dishes.

                                                                                            Eating vegetarian and vegan in Ethiopia is very common due to fasting days thus creating a vast selection of delicious plant based dishes. 

                                                                                            A typical Ethiopian meal is served family style on top of sourdough flat bread called injeera, made exclusively from teff flour. Learn how to make injeera sourdough starter and cook the delicious flatbread. 

                                                                                            Lentils take centre stage, we will make a berbere spice blend for the lentils and slowly cook the stew for intense flavour. We will also make a variety of vegetables based dishes and salad.

                                                                                                We will explore the seductively spiced curries of India, the fragrant curries of the Caribbean, the creamy coconut curries of Thailand and smokey African curry. 

                                                                                                Aromatics such as garlic, ginger, galangal, lemongrass and chillies will take centre stage in the day as we discover the distinctive flavours that each brings to a dish. We will also discuss chillies, how to use them effectively, which is hottest and how to add flavour and gauge heat without spoiling the pot.

                                                                                                                            Romy developed her passion for cooking after emigrating to the UK and ‘pining for proper home cooking.’ Born in Burnpur, West Bengal, Romy's menu reflects her childhood; her father worked in a steel plant and many different people visited their home, bringing their food and culture with them. Romy was inspired by the varied cooking styles she encountered, and loves to experiment with local ingredients. Her dishes combine the spices and flavours that she grew up with in India.

                                                                                                                                  Koreans follow the oriental rule of 5 tastes, salt, sweet, sour, hot and bitter: salt from soya sauce and bean paste, sweet from sugar and sweet potatoes, sour from vinegar, hot from chilli peppers and mustard and bitter from ginger.

                                                                                                                                  In addition to the 5 tastes, they follow an arrangement of 5 traditional colours of red, green, yellow, white and black, which will ensure a nutritious variety of ingredients. They also spend time beautifully arranging the food in different colours. Presentation is essential to Korean meals.

                                                                                                                                  Rice (bap) is central to the Korean meal. The word for rice is also the word for a meal. A bowl of steaming rice and a bowl of soup are always served to everyone at the meal, followed by varied shared side dishes. All dishes are served at the same time. There is no concept of separate courses.

                                                                                                                                  Preserving food by pickling, salting and fermenting is a Korean passion with Kimchi being the most famous fermented cabbage side dish.

                                                                                                                                    Sri Lanka is a large and diverse Island, known as the “the cradle of the ancient spice trade” its cuisine benefits from the culinary influences of migration and the ancient Spice Route. Traditional Sinhalese dishes, meet Tamil (Southern Indian) and Southeast Asian cuisines as well as delicious Dutch and Portuguese influenced desserts.

                                                                                                                                    Sri Lankan food offers an interesting variation to the familiar food of India. Lighter, fragrant, healthier, colourful, using interesting spice blends, using the native cinnamon and black pepper, lots of coconut milk and fresh coconut and plenty of local greens.

                                                                                                                                                  Eating in Myanmar is an exciting adventure of spicy curries and cooling salads with food styles from China, Thailand and India.

                                                                                                                                                  Myanmar is sandwiched between better known culinary neighbours China, India and Thailand and you can find influences from them, Samosas and pakoras from India, stir-fried rice and noodles from China and green mango and papaya salads from Thailand. Burma is made up of many different ethnic groups who all have their own distinctive dishes and ways of cooking. 

                                                                                                                                                  To experience local Myanmar cooking, it's best to eat in the teahouses. Eating vegetarian in Myanmar is easy enough with the words " theq-thaq-luq" which translates as "without living things". Every Full Moon day devout Buddhists abstain from fish and meat.

                                                                                                                                                  Balancing flavours with sour, spicy, bitter and salty is very important and is achieved by serving many small dishes each with a difference flavour balance. For lunch, the main meal of the day, you will be served soup, large quantity of white rice, a selection of curries, salads and condiments.

                                                                                                                                                  On this evening course we will make a typical 'rice meal' with a selection of curries, salads and condiments to eat with white rice.

                                                                                                                                                        Colette Woods ran her own gluten-free bakery in Somerset called Fliip gluten free which makes delicious savoury tarts that are sold in many health food shops and delis in the south west of England. She is an experienced chef and cooked for Peter Gabriel at Real World Studios. Colette became intolerant to wheat and found that by cutting wheat out of her diet, it greatly improved her health.

All of the dishes are her family favourites. Sachiko is an expert in Shojin Ryori Buddhist vegetarian cooking which is a special way of preparing, cooking and eating for Buddhist monks at Zen temples.

                                                                                                                                                          The fundamental thinking behind Shojin Ryori is the wholehearted appreciation of food. Food is seasonal and locally grown. Seasonings are gentle. Nothing is wasted. Food is simple but sophisticated. Each Shojin temple has their own rules about what types of vegetables can be used and how they can be eaten.  Such ideas make Shojin unique from other types of vegetarian Japanese cuisine. This is simple, honest food where the experience of how we eat, sensibly and thankfully, is as important as the food.

                                                                                                                                                          A Shojin meal, called Ichi Ju San Sai, typically consists of a soup and three dishes. We will be exploring these types of dishes throughout the course.

In this small group workshop, you will focus on your physical health with pilates exercises and healthy cooking. Lucky for us, our chef tutor Stefani is an expert at both! She is a certified advanced STOTT pilates instructor and has been teaching for a number of years. She has specialised in small equipment mat work, and all pilates moves within the workshop will be mat-based using a variety of small equipment. 

                                                                                                                                                                  Pilates has something to offer people of all ages and levels of ability and fitness, from beginners to elite athletes. Regular pilates practise helps improve posture, muscle tone, balance and joint mobility, as well as relieve stress and tension. This weekend is suitable for complete beginners and those who are already practising pilates.

In between the morning and afternoon pilates sessions you will learn to make an easy, delicious, and nutritious lunch. Traditionally, the first day of the New Year is a meat free day, to enable the body to be cleansed in preparation for the year ahead.

Sometimes asking around your neighbours will reveal wonderful supplies of apples perfect for your recipe.

                                                                                                                                                                                                                    We will cook with a selection of different apples to show what an incredible resource they are.

                                                                                                                                                                                                                    And you will make recipes such as:

                                                                                                                                                                                                                        The idea of running a short sourdough baking workshop may seem totally crazy. Consider this a deconstructed baking session where you will learn all the steps required for preparing and baking a sourdough loaf, but not necessarily in the right order.

                                                                                                                                                                                                                        Ottavia is an expert baker and has a passion for making sourdough.

                                                                                                                                                                                                                        Thanks to a simple structure already tested to suit busy home bakers you can familiarise with all the practical and theoretical aspects of using a natural leaven to bake at home the most delicious and healthy loaves, but most of all you will realise how simple sourdough baking can be, even without professional ovens or equipment. 

                                                                                                                                                                                                                        Three hours is all it takes to mix, fold and shape a sourdough loaf, ready for an overnight proving, during which the baker can take a well deserved rest. The sourdough buildup to prepare the dough has equally been left to ferment overnight, without much input from the baker. Consider this a deconstructed baking session where you will see all the steps required for preparing and baking a sourdough loaf, but not necessarily in the right order.

                                                                                                                                                                                                                        * prepare a sourdough buildup,

                                                                                                                                                                                                                        * mix leaven, water, flour and salt to make a dough and fold it during bulk fermentation

                                                                                                                                                                                                                        * divide the dough, pre-shape and shape the loaf and place it into a proving basket

                                                                                                                                                                                                                        * bake two loaves that have been prepared in advance

                                                                                                                                                                                                                        * work in pairs (it is more fun)

                                                                                                                                                                                                                        * learn how to change the recipe to vary the bread you bake

                                                                                                                                                                                                                        * learn how to time kneading, proving and baking around a busy day

                                                                                                                                                                                                                        * We will make dips and salad to eat with the bread

                                                                                                                                                                                                                        You will take home a detailed recipe and your loaf in its proving basket ready to bake and a jar of sourdough starter for your next loaf.

                                                                                                                                                                                                                        This evening course includes your own wicker proving basket.

                                                                                                                                                                                                                          Seasonal baking is extremely popular in Italy, where each province boasts baked goods firmly rooted in the religious festivities and every family has their own version of the traditional recipes, often passed down for generations with little or no change.

                                                                                                                                                                                                                          Ottavia is an expert baker and will give you a taster of the richness and variety of seasonal baking while bringing the recipes alive in the context of Italian historical culinary culture. 

                                                                                                                                                                                                                          Join her for a day of baking that is sure to get you in the right mood for baking in advance for Christmas. 

                                                                                                                                                                                                                          You will make:

                                                                                                                                                                                                                          • Panforte, a richly spiced sweetmeat from Siena, already known during Dante's times. 
                                                                                                                                                                                                                          • Panettone, the well known dome shaped sweet cake from Milano, with its light texture and buttery flavour.
                                                                                                                                                                                                                          • Home-made orange peel for the Panettone.
                                                                                                                                                                                                                          • Panone, a soft chocolate and dried fruit version of the certosino from Bologna.
                                                                                                                                                                                                                          • Cavallucci, spicy walnut biscuits from Tuscany.

                                                                                                                                                                                                                          Expect lots of hands-on cake making.
