Join us for an immersive 3 day experience of everything spicy.
This course is inspired from our travels around the world, from Thailand, Vietnam and Indonesia through to China, Korea and India.
We will be making balanced dishes with the 6 flavours: hot, salty, sour, sweet, bitter, umami.
Learn dishes that are boldly flavoured and nutritious, beautiful looking and easy to make, using quick cooking techniques, perfect for both dinner parties and livening up every day meals.
Learn how to use authentic ingredients using the distinctive flavours of coriander, lemongrass, fresh root turmeric, kaffir lime leaves, galangal, curry leaves, garlic, tamarind and chillies. Familiar spices such as cumin and coriander, mustard seeds and fenugreek and more unusual spices such as Sichuan pepper, asafoetida and amchoor. Learn how to make your own spice blends and curry pastes.
There will be lots of tasting as we work on balancing the flavours of the dishes. The course is hands on with some demonstration and you will make food such as:
The course will include knife skills, and essential skills such as how to stir-fry and steam plus lots of chefs tips and techniques. You will learn how to make vegetarian alternatives to fish sauce and Kimchi and how to adapt dishes which are traditionally made with meat and fish. How to make perfect rice, the best way to peel ginger and chop garlic and how to make tofu and tempeh taste really delicious. What you need for your store cupboard and where to source spices and unusual ingredients.
There will be several breaks for tastings and refreshments during the day and we will finish with a shared meal which you will have made.
For each course we choose the recipes that fit the season, depending on time of year and the availability and seasonality of produce. You will receive a pack of all of the recipes we have made during the three days so that you can recreate them at home.
