January is a great time of year to start new ways of eating and the Veganuary movement is here to help you on your way. 1n 2018 168,542 people signed up to Veganuary and pledged to go Vegan in January, a massive increase of 183% from 2017.

Perhaps you have already signed up to Veganuary or just want to add some easy vegan recipes to your repertoire.

On this cooking day we will give you a simple plant-based tool-kit to help you create simple vegan recipes.

We will make warming nourishing dishes such as:

  • Tom Yam Soup with Shitake Mushrooms
  • Miso Soup with buckwheat noodles and winter greens
  • Keralan Thoran with mung beans
  • Asian rice noodle salad with lime and chilli
  • Roasted beetroot, chickpea and lentil salad

The course involves a mixture of demonstrations, knife skills and hands-on cookery in small groups, and is led by our experienced chef tutors who can answer all of your quick cooking questions.

        Mexican Bowl

        The Mexican bowl is a very nutritious with the traditional mix of herby Quinoa with refried beans, tomato jalapeño salsa and avocado mash topped with mango salsa, coriander leaves, slices of jalapeño chilli and tortilla chips.

        Japanese Bowl 

        Our Japanese bowl is inspired from the Okinawa diet, which is a very healthy diet from the Japanese Okinawa islands where there is one of the highest density of people over 100 in the world. Their diet is based on sushi rice, purple vegetables, tofu, miso, seaweed and pickles. Purple sweet potatoes and carrots are rich in flavonoids, carotenoids, vitamin E and lycopene.

              As the trend continues towards more meat-free meals, we are looking for new textures to add to our dishes. Seitan is all about texture and plant-based protein. 

              We will begin by making seitan then explore the different flavours and textures that can be achieved.

              Ethiopian food is known for it's depth of flavour and richness. Eating vegetarian and vegan in Ethiopia is very common due to fasting days thus creating a large selection of traditional delicious plant-based dishes.

              Course Details

              A traditional Ethiopian meal is served family style on top of sourdough flat bread called injera, made exclusively from teff flour. You will learn how to make injera sourdough starter and cook the delicious flatbread. We will also make a quick injera for busy days.

              We will make Yeqimen Zeyet, a seasoned oil that provides a flavourful base for Ethiopian cuisine. Then we will move on to a Berber spice blend guaranteed to become a faithful companion to your spice cupboard. 

              Lentils and split peas take centre stage, however these kay wot dishes are more of a sauce then a stew. Slowly cooked for intense flavour and a sauce like consistency. We will show you the steps of cooking down the onions to achieve a perfect wot. We will also make a variety of seasonal vegetables based dishes and salad.

              Dishes we are likely to make are for example:

              • Sambas - lentil filled pastry
              • Awaze - red pepper hot sauce
              • Mesir wat - lentils with Berbere spice blend

              Lucy will show you how easy it is to cut down on sugar, how to gently cleanse post-Christmas and support and nourish your body with healthy wholefoods throughout the winter months. You will learn all about foods and natural remedies that can help your body cleanse, alongside some healthy gut and liver supporting recipes. She will also explore and demystify the process of detoxification in the body. 

              Lucy will discuss how you can work towards a balanced diet for 2018 – we will look at what “healthy eating” really means by breaking down the health trends and explore what a healthy eating plan might look like for you.  We will all cook a wholesome beetroot soup, a nourishing vegetable tagine, learn how you can make a quick and easy fermented salsa for gut health and some tasty snacks and smoothies full of health-giving goodies.

                Chinese Sichuan cooking is full of exciting fragrant flavours and Lydia will show you how easy it is to cook a traditional vegan Sichuan supper.

                Course Details

                Sichuan cooking is all about a combination of flavours; hot from chillies, numbing from Sichuan peppers, salty, sour, sweet, bitter and smoky. One dish can contain all these disparate flavours. Each dish has its own style, they say in Sichuan a hundred dishes has a hundred different flavours.

                Lydia will teach you all about the essential Chinese store cupboard ingredients and where to buy them.

                You will learn a selection of dishes such as:

                • Mapo Dou Fou
                • Fragrant Spicy Aubergines
                • Sichuan Greens with garlic 

                The evening will be a combination of demonstrations and hands-on cookery. The evening will finish with supper which you will have created.  You will be given a pack of recipes so that you can recreate the dishes at home.

Eating simple uncomplicated food that is freshly prepared right in front of you. Using the simplest ingredients as well as an array of spices, you will recreate some of the most popular vegetarian street food from Mauritius.

                          Brinda will give you an insight into traditional multi-cultural Mauritian food. When we talk of culture and traditions in Mauritius, the unique ethnic diversity immediately transpires. Mauritius does not have one culture, but the blending of several cultures and traditions. Mauritian culture is based on the diversity of the population of different customs and traditions stemming from those who, during the last 400 years, have settled on the island’s shores.

                          For a tiny island, Mauritius has an incredibly rich and diverse food culture, influences from its mélange of inhabitants (Creole, French, Chinese and Indian) and the use of spices in my cooking.

                          Expect to make a selection of dishes such as:

                          • Chana Dhal Fritter – famously known in Mauritius as “Gateaux Piments”
                          • Aubergines fritters
                          • Coriander chutney
                          • Chapattis made with a mixture of wholemeal and white flour
                          • Potato curry with freshly roasted cumin
                          • Mushrooms in a rich tomato sauce – famously known as “Mushroom Rougaille”, a typical “creole” dish.

                                        We will be staying with David and Emma at their fabulous hotel Las Chimeneas in the traditional unspoilt white village Mairena perched on the side of the mountains with beautiful views to the sea and snow-capped mountains behind. 

                                        David and Emma have lived in Mairena for 18 years and they are extremely knowledgeable hosts and guides through the history, traditions, fauna, food and people of the area. They have their own finca where they grow organic vegetables, olives and fruit trees.

                                        We will cook paella on an open fire, learn how to make goats cheese, pick wild herbs for salads, visit the village olive oil press, picnic in the hills, eat tapas in the local town Ugijar and treat ourselves to hot chocolate with churros.

                                        The highlight will be lunch with Chris and Anna Stewart at their farm El Valero, the famous setting for his best-selling book ‘Driving over lemons’.

                                        This holiday differs from our Italian cookery holiday with its dedicated kitchen and hands on teaching, this is more a foody Spanish experience with cookery demos, from their experienced local Spanish cooks Sole and Conche.

She ran her own bakery in Somerset called Fliip gluten free which makes delicious savoury tarts.  She is an experienced chef and cooked for Peter Gabriel at Real World Studios. Colette became intolerant to wheat and found that by cutting wheat out of her diet, it greatly improved her health.

                                              On the day you will learn how to make a sourdough starter and make sourdough from Collette's family starter. You will also learn how to make an enriched dough to make brioche. We will make a vegan gluten free pasta and with the recipe make lasagne for our lunch and in addition will make ravioli and tagliatelle with a sauce. We will make a choux pastry to make into chocolate eclairs and mushroom gougere. We will make a few nut cheeses which will will use throughout the day. All topped off with a delicous rich chocolate mousse cake.

                                                    A typical Ethiopian meal is served family style on top of sourdough flat bread called injeera, made exclusively from teff flour. Learn how to make injeera sourdough starter and cook the delicious flatbread. 

                                                    Lentils take centre stage, we will make a berbere spice blend for the lentils and slowly cook the stew for intense flavour. We will also make a variety of vegetables based dishes and salad.

                                                                                    Koreans follow the oriental rule of 5 tastes, salt, sweet, sour, hot and bitter: salt from soya sauce and bean paste, sweet from sugar and sweet potatoes, sour from vinegar, hot from chilli peppers and mustard and bitter from ginger.

                                                                                    In addition to the 5 tastes, they follow an arrangement of 5 traditional colours of red, green, yellow, white and black, which will ensure a nutritious variety of ingredients. They also spend time beautifully arranging the food in different colours. Presentation is essential to Korean meals.

                                                                                    Rice (bap) is central to the Korean meal. The word for rice is also the word for a meal. A bowl of steaming rice and a bowl of soup are always served to everyone at the meal, followed by varied shared side dishes. All dishes are served at the same time. There is no concept of separate courses.

                                                                                    Preserving food by pickling, salting and fermenting is a Korean passion with Kimchi being the most famous fermented cabbage side dish.

                                                                                        Sri Lanka is a large and diverse Island, known as the “the cradle of the ancient spice trade” its cuisine benefits from the culinary influences of migration and the ancient Spice Route. Traditional Sinhalese dishes, meet Tamil (Southern Indian) and Southeast Asian cuisines as well as delicious Dutch and Portuguese influenced desserts.

                                                                                        Sri Lankan food offers an interesting variation to the familiar food of India. Lighter, fragrant, healthier, colourful, using interesting spice blends, using the native cinnamon and black pepper, lots of coconut milk and fresh coconut and plenty of local greens.

                                                                                        Tempering technique, used to develop strong spice flavours by frying whole spices in oil before using them.

She ran her own bakery in Somerset called Fliip gluten free which makes delicious savoury tarts that are sold in many health food shops and delis in the south west of England. She is an experienced chef and cooked for Peter Gabriel at Real World Studios. Colette became intolerant to wheat and found that by cutting wheat out of her diet, it greatly improved her health.

                                                                                                      Myanmar is sandwiched between better known culinary neighbours China, India and Thailand and you can find influences from them, Samosas and pakoras from India, stir-fried rice and noodles from China and green mango and papaya salads from Thailand. Burma is made up of many different ethnic groups who all have their own distinctive dishes and ways of cooking. 

                                                                                                      To experience local Myanmar cooking, it's best to eat in the teahouses. Eating vegetarian in Myanmar is easy enough with the words " theq-thaq-luq" which translates as "without living things". Every Full Moon day devout Buddhists abstain from fish and meat.

                                                                                                      Balancing flavours with sour, spicy, bitter and salty is very important and is achieved by serving many small dishes each with a difference flavour balance. For lunch, the main meal of the day, you will be served soup, large quantity of white rice, a selection of curries, salads and condiments.

                                                                                                      On this evening course we will make a typical 'rice meal' with a selection of curries, salads and condiments to eat with white rice.

                                                                                                              The fundamental thinking behind Shojin Ryori is the wholehearted appreciation of food. Food is seasonal and locally grown. Seasonings are gentle. Nothing is wasted. Food is simple but sophisticated. Each Shojin temple has their own rules about what types of vegetables can be used and how they can be eaten.  Such ideas make Shojin unique from other types of vegetarian Japanese cuisine. This is simple, honest food where the experience of how we eat, sensibly and thankfully, is as important as the food.

                                                                                                                      Spring is the perfect time to reconnect with your wellness goals! In this small group workshop, you will focus on your physical health with pilates exercises and healthy cooking. Lucky for us, our chef tutor Stefani is an expert at both! She is a certified advanced STOTT pilates instructor and has been teaching for a number of years. She has specialised in small equipment mat work, and all pilates moves within the workshop will be mat-based using a variety of small equipment. 

                                                                                                                      Pilates has something to offer people of all ages and levels of ability and fitness, from beginners to elite athletes. Regular pilates practise helps improve posture, muscle tone, balance and joint mobility, as well as relieve stress and tension. This weekend is suitable for complete beginners and those who are already practising pilates. 

                                                                                                                      Both days will start at 10am with homemade raw energy bars and herbal teas to prepare us for the day. In between the morning and afternoon pilates sessions you will learn to make an easy, delicious, and nutritious lunch. Traditionally, the first day of the New Year is a meat free day, to enable the body to be cleansed in preparation for the year ahead.

For instance, dumplings (symbolic of money and wealth) and noodles ( for longevity) are always part of a Chinese New Year feast.

                                                                                                                                                                            Thanks to a simple structure already tested to suit busy home bakers you can familiarise with all the practical and theoretical aspects of using a natural leaven to bake at home the most delicious and healthy loaves, but most of all you will realise how simple sourdough baking can be, even without professional ovens or equipment. 

                                                                                                                                                                            Three hours is all it takes to mix, fold and shape a sourdough loaf, ready for an overnight proving, during which the baker can take a well deserved rest. The sourdough buildup to prepare the dough has equally been left to ferment overnight, without much input from the baker. Consider this a deconstructed baking session where you will see all the steps required for preparing and baking a sourdough loaf, but not necessarily in the right order.

With disasters far away, we soon forget when the news cameras have moved else where, but with Nepal so many people are reliant on tourism and in particular trekking. 

                                                                                                                                                                                        I'm in touch with our wonderful guide Ram Babu Bastakoli who is out distributing basics and the cookery school is supporting him to buy rice through The Relief Distribution Program to Earthquake Victims.

                                                                                                                                                                                        The buffet supper will be a simple Nepalese meal of Dhal, Bhat and Tarkari.

                                                                                                                                                                                        Dhal (lentils), bhat (rice) and tarkari (vegetables) are staples in the Annapurna mountain region and are eaten twice a day at home. 

                                                                                                                                                                                        The dhal is made with a mix of split lentils – black urid lentils being popular – flavoured with turmeric, cumin and coriander and sometimes spinach. The Nepalese like their dhal soupy – they pour it over a mound of rice, mix with the fingers of the right hand and eat deftly keeping their palm spotlessly clean, it’s quite a skill!

                                                                                                                                                                                        Potatoes are the main component of the tarkari, then seasoned with onion, garlic, fenugreek, turmeric, chilli, cumin and coriander plus lots of salt. Served on the side are stir-fried greens such as mustard tops, spinach and cabbage, and pickles (mooli sliced, much like the Korean kimchi).

We are also planning our long-term response, which will include repairing and rebuilding schools, and developing the skills of the people of Nepal in areas such as health, hygiene, sanitation and disaster-preparedness. There's a certain magic in starting with a bowl of flour, yeast and water and ending up with a warm, sweet smelling loaf.

                                                                                                                                                                                                                              Sumayya Usmani is a food writer and cookery teacher who specialises in Pakistani cuisine. She will explore and celebrate the unique flavours of Pakistan, which is a cuisine best described as a fusion of South Asia, because of the recipes that have been developed due to it’s local, border and migrant cuisines.

                                                                                                                                                                                                                              She will share some of her favourite family recipes, local specialties and contemporary takes of old recipes. Sumayya’s class will open a whole new world of infusing with spice, creating authentic flavour of a cuisine that once savoured, is never forgotten.

                                                                                                                                                                                                                              Sumayya contributes regularly to many prestigious UK based food magazines such as BBC Good Food, Delicious, Good Things, the Guardian Cook, she has also worked with Madhur Jaffery on her recent cookbook.

                                                                                                                                                                                                                                            When my sister asked if I would like to join her on a trek to Annapurna base camp in Nepal, I jumped at the opportunity to discover interesting and vegetarian-friendly food. I was lucky enough to cook with our guide’s wife Sharmila, who showed me how to cook dhal bhat.

                                                                                                                                                                                                                                            Dhal (lentils), bhat (rice) and tarkari (vegetables) are staples in the Annapurna mountain region and are eaten twice a day at home. My sister found my habit of photographing our twice-daily dhal bhat quite peculiar, but I was as keen to capture the food experience here as much as the majestic snowy peaks!

                                                                                                                                                                                                                                            The dhal is made with a mix of split lentils – black urid lentils being popular – flavoured with turmeric, cumin and coriander and sometimes spinach. The Nepalese like their dhal soupy – they pour it over a mound of rice, mix with the fingers of the right hand and eat deftly keeping their palm spotlessly clean, it’s quite a skill!

                                                                                                                                                                                                                                            Potatoes are the main component of the tarkari, then seasoned with onion, garlic, fenugreek, turmeric, chilli, cumin and coriander plus lots of salt. Served on the side are stir-fried greens such as mustard tops, spinach and cabbage, and pickles (mooli sliced, much like the Korean kimchi).

Only Seville oranges go into traditional marmalades, but other citrus fruits, sometimes in combinations, are also used. The very best marmalade is homemade. There are annual marmalade competitions to celebrate both the skills involved and the heavenly product.

                                                                                                                                                                                                                                            On this course you will make your own Seville marmalade, from choosing and preparing the fresh fruit through to filling the jars and labelling. 

                                                                                                                                                                                                                                            On the way we will explore different ways of cutting and preparing the peel to get either the classic ‘thick cut’ or a bright golden jelly with shards of aromatic rind. 

                                                                                                                                                                                                                                            Both the famous Dundee and Oxford types of marmalade have added flavourings. You will make batches with different classic flavours. 

                                                                                                                                                                                                                                            The class will make 4 or more different styles or flavours of marmalade, with jars to take home.

We run this special course only during the Seville season.

First of all there is no comparison between home made pasta and the poor excuse for it that supermarkets sell. Second, it is fun and a great source of pride.                                                                                                                                                                                                                                                       Vietnamese food is rightly enjoying its place near the top of current Asian food trends. In this evening course, Nguyet (Noya) Pawlyn, born in southern Vietnam, introduces us to the wonderfully fresh flavours of Vietnamese cuisine.

                                                                                                                                                                                                                                                      Vietnamese food is all about the balance between five essential flavours: sweet, sour, bitter, salty and spicy. Plentiful and various fresh herbs play a major part in Vietnamese food, and are easy to source locally in Bath.

                                                                                                                                                                                                                                                      During this evening workshop, you will learn how to prepare authentic Vietnamese street food classics, with a vegetarian twist:

                                                                                                                                                                                                                                                      Bánh Cun- Steamed rice noodle parcels filled with mung beans, white fungus and black wood ear mushrooms.

                                                                                                                                                                                                                                                      Dau Hu Sot Ca- Crispy Tofu cooked In tomato pepper sauce a very more-ish dish served with jasmine rice.

                                                                                                                                                                                                                                                      Do Chua- Pickled carrots and daikon add a sour note, and accompany many dishes including summer rolls and Bánh Mì

                                                                                                                                                                                                                                                      Nước chấm chay-Zingy dipping sauce: a vegetarian version of the classic Vietnamese fish sauce, served with every Vietnamese meal. 

                                                                                                                                                                                                                                                      The evening will be a combination of demonstrations and hands-on cookery. The evening will finish with a Vietnamese meal which you will have created. You will be given a pack of recipes so that you can recreate the dishes at home.

                                                                                                                                                                                                                                                      Noya was born the seaside town of Qui Nhon in the south of Vietnam. Growing up in the UK from aged 7, Vietnamese food was her link to the culture she left behind. Now living in Bath, Noya runs weekly supper clubs where her passion for Vietnamese cuisine are enjoyed by her regular customers.
