This vegan cooking course is one of our most popular courses, full of delicious seasonal recipes that you can make quickly and easily and easily at home. We’ll work with a range of pulses, grains, and vegetables to demonstrate effortless ways to add flavour and variety to your home cooking.
On this vegan course we will show you how to work with tofu, make vegan labna and mayonnaise, create lush vegan puddings and much more. We will also focus on essential and unusual store cupboard ingredients, how to achieve a balanced vegan diet and chefs tips to save time and increase your confidence in the kitchen.
All of our dishes are made from the best of what’s in season, be they our own garden produce, wild food or vegetables from one of our fantastic suppliers, Eades and Castle Farm.
The recipes will change with the seasons, so expect dishes such as:
- Cauliflower and Kale Fritters
- Artichoke Farinata
- Char-grilled vegetables and Puy lentil salad
- Sesame Tofu chips and Vegan Mayo
- Herby Quinoa Salad
- Turlu Turlu
- Miso Glazed Aubergines
- Roasted Seasonal Fruit with sweet scented labna
- Sticky Toffee Pudding
- Chocolate Brownie
The course involves a mixture of demonstrations, knife skills and hands-on cookery in small groups, and is led by our experienced chef tutors who can answer all of your quick cooking questions.
We will have a mid day snack and then a late lunch. You will go home with a pack of recipes and lots of fast and delicious tips.
The tutors were lovely, helpful & passionate about food and keen to share, not just what we were cooking but about other dishes. So the learning will go on far beyond the class.
