Course Details

In South India a tiffin is a snack between lunch and dinner. Tiffins is a term which probably has its origins in the British Raj as an Indian version of British tea and cake.

Sundari will share her family recipes and show you how to make the tiffins that she was brought up with.

We will make snacks such as:

  • Sundal - spicy tempered chickpeas with coconut
  • Potato Bondas - crisp potato balls
  • Onion Pakodas - onion fritters
  • Lentil Pancakes with Avial - Keralan coconut vegetable curry
  • Poori
  • Paruppu payasam - deliciously sweet Keralan dessert

This evening will be a mixture of demonstration and some hands on cooking with lots of tips, talking and tasting.

We will share a tiffin style meal so you can taste all of the dishes we have made. You will receive a folder of all of the recipes made so you can recreate them at home.
