English breakfast is so special because of the uniqueness of marmalade. Only Seville oranges go into traditional marmalades, but other citrus fruits, sometimes in combinations, are also used. The very best marmalade is homemade. There are annual marmalade competitions to celebrate both the skills involved and the heavenly product.
On this course you will make your own Seville marmalade, from choosing and preparing the fresh fruit through to filling the jars and labelling.
On the way we will explore different ways of cutting and preparing the peel to get either the classic ‘thick cut’ or a bright golden jelly with shards of aromatic rind.
Both the famous Dundee and Oxford types of marmalade have added flavourings. You will make batches with different classic flavours.
The class will make 4 or more different styles or flavours of marmalade, with jars to take home.
Fresh Sevilles are available in Britain only during January. We run this special course only during the Seville season.
We will provide lunch and a comprehensive pack of recipes to take home.
This course is taught by Christopher Robbins who is an expert marmalade and jam maker as well as a medicinal herbalist and forager.
Christopher's depth of knowledge and love of marmalade was wonderful.
