The cuisine of the Middle East is a delight for vegetarians and vegans with zesty dips, aromatic roasted vegetables with sumac and spiced flatbreads, all using the best seasonal vegetables and herbs. 

Course Details

 On this evening cookery course you will learn to create a delicious mezze of your own. We will make dishes such as:

  • Turlu Turlu with Summer Roasted Vegetables 
  • Zataar (a fragrant mix of spices and herbs) 
  • Lavash (Lebanese flat bread)
  • Muhamarra (a dip made from beetroot, nuts and bread)
  • Freekeh with fresh herbs 

You'll  learn how to use traditional spices, herbs and flavours from the Mediterranean and the Middle East.

The class is a mixture of demonstration and hands on participation.

You will finish the evening with a shared mezze of everything we have cooked, with specially selected organic wine or fruit juice. You will be given a recipe file of all the dishes made so you can recreate them at home.

Time: 6:30 - 9:00pm

About the tutor

Helen is Demuths head tutor and has led the teaching at the school for 8 years. She was Head Chef at Demuths restaurant, a post she filled for 5 years. She is a trained chef and has trained in classical French cooking and is now an expert in Vegan cookery training, also an expert in knife skills and chefs tips. She enjoys the creativity of plant-based and vegan cooking, lifting vegetables to the central position, they deserve in our diets.
