Mexican cooking is one of our favourite seasonal courses bursting with hot, complex flavours and will get your taste buds tingling! 

Course Details

Mexico has the perfect climate for eating out in the streets and the markets are full of street food stalls selling roasted corn on the cob, tortillas and tamales. On this course you will learn how to make traditional quick Mexican dishes, so different from Tex-Mex!

  • We will show you how to cook with different kinds of chillies. We will cover how to prepare and cook with both fresh and dried chillies.
  • You will learn about unusual ingredients such as tomatillos, masa harina, sweetcorn husks, quinoa and epazote and you will also learn where to source them.

We’ll start with:

  • 'Huevos rancheros'  a Mexican breakfast 

and then make a selection of the following dishes:

  • Tamales Rellenos de Calabacin (stuffed corn husks)
  • Tortillas de Maiz
  • Arroz a la Mexicana
  • Frijoles Negros Refritos
  • Tomatillos Salsa cruda
  • Corn and Habanero Salsa 
  • Chocolate and Chilli Mole Sauce
  • Mexican tequila chocolate pudding

We always choose our recipes based on the season and availability of the produce. We’ll use a variety of fresh chillies grown just six miles from Bath at The Upton Cheyney Chilli Farm, as well as special Mexican dried chillies, herbs and spices.

There will lots of eating and tasting during the day and a late lunch to finish served with organic wines or local juices. 

You will receive a pack of all of the recipes we have made during the day so that you can recreate them at home including extra information on chillies and Mexican ingredients.

    About the tutor

    Lydia is one of our lead chef/tutor and specialises in World cooking and baking and teaches on all our longer Diploma courses.

    Lydia comes from a food loving family and learnt to cook from an early age with her Chinese mother. She has spent all her working life involved with food. She is an experienced and gifted baker. Her sourdough starter is the stuff of legends and we always have a jar tucked away at the back of the fridge. Lydia is an excellent teacher, with a wealth of knowledge and creativity to impart alongside a warm and approachable personality.
