This is our ‘restaurant style’ course, which is all vegan. Showing you how to make creative vegan dishes that are stunning to look at & delicious to eat. All of our dishes are made from the best of what’s in season, be they our own garden produce, wild food or vegetables from one of our fantastic suppliers, Eades and Castle Farm.
Course Details
We will show you how to work with the best and newest vegan ingredients to create 3 courses with instruction on how to decorate each dish beautifully.
The recipes will change with the seasons so expect to make dishes such as:
- Malfatti – spinach and ricotta gnocchi
with 'cheesy' thyme shallot sauce, cherry tomatoes and crispy cavolo nero - Great British Squashes
with pickled squash, roasted squash and sweet and sour squash with braised fennel and shallots - Chocolate Mole Ganache
with plums and pistachio wafers
We will also focus on unusual store cupboard ingredients, how to achieve a balanced vegan diet and chefs tips to save time and increase your confidence in the kitchen.
The course involves a mixture of demonstrations, knife skills and hands-on cookery in small groups, and is led by our experienced chef tutors who can answer your cooking questions.
There will be lots of cooking, but also plenty of conversation, tasting, fun and lunch. You will leave with a comprehensive recipe pack.

Dietary Suitability
All dishes in this course will be vegan and we will happily cater for those who have other special dietary requirements (nuts, soy, wheat, etc). Please let us know ahead of time so we can plan accordingly.
