This is one of our most popular courses offering fast, seasonal and easy to make food. The dishes we cook will use the best of what's in season, with an emphasis on local ingredients which we source from our local suppliers Eades and Castle Farm, as well as wild food and produce from our own garden.

Course Details

Our Fast and Delicious Day course is one of our most popular. On this shorter version we will make dishes which take around thirty minutes to prepare and cook, saving you time and effort in the kitchen. 

You will cook five dishes which will give you new ideas and recipes for cooking at home, together with tips for presentation, preparation and storage.

The dishes themselves will depend on what's seasonally available, but expect recipes such as

  • - Squash Filo parcels
  • - Turkish Gözleme with Ezme Salad and Tzatziki
  • - Crispy Sesame Tofu 
  • - Puy Lentils with Roasted Vegetables and Salsa Verde
  • - Roasted Cauliflower with Sumac and Haloumi
  • - Herby Quinoa Salad
  • - Chak Chouka 

 The course involves a mixture of demonstration and hands on cookery in small groups, and is led by our experienced chef tutors who can answer all of your cooking questions.

You will learn knife skills and techniques which will save time and improve your kitchen skills and cook a variety of delicious, quick dishes. Dishes and ingredients will vary depending on what is in season.

We will share lunch with everything we have made at the end of the workshop. 

You will receive a recipe file at the end of the day so that you can recreate the dishes at home.

    About the tutor

    Lydia is one of our lead chef/tutor and specialises in World cooking and baking and teaches on all our longer Diploma courses.

    Lydia comes from a food loving family and learnt to cook from an early age with her Chinese mother. She has spent all her working life involved with food. She is an experienced and gifted baker. Her sourdough starter is the stuff of legends and we always have a jar tucked away at the back of the fridge. Lydia is an excellent teacher, with a wealth of knowledge and creativity to impart alongside a warm and approachable personality.
