Dia de los Muertos is one of the most important days of the year in Mexico-a day where most families pay their respects to ancestors and celebrate life. During this day course we will explore the cooking techniques, spices and traditions of Mexico using authentic ingredients such as Masa Harina, Mexican fresh and dried chillies, corn husks, beans and grains.
This is the perfect day for those who want to cook Mexican rather than “Tex Mex” and we will use traditional recipes as well as our own vegetarian versions of Mexican dishes. The day will feature working with the spices and chilli flavours of Mexico to get your Mexican cookery tasting like the real thing. We will be using lots varieties of chillies from the smoky dried Ancho, Poblano and Chipotle, to fresh Jalapeno and Habanero with apricot and lemony flavours, all our varieties are sourced from our local chilli growers.

The day will include hands on cookery, working in small groups as well as some demonstrations.
The day will finish with a delicious meal which you will have made.
You will receive a pack of recipes to take home including a full guide to Mexican ingredients, spices and chillies, where to buy them and how to use and store them.
