Our Chinese cookery course will give you the knowledge and confidence to make Chinese cuisine a regular part of your home cooking. Vegetables are hugely important in Chinese cooking, making it easy to create a vegetarian or vegan Chinese meal at home. This course shows you the way.

Course Details

This course course is led by Lydia, one of our lead chef tutors who specialises in Chinese cuisine. She will show you how to make her mother's family favourite dishes and introduce you to new ingredients such as fresh lotus root, fresh water chestnuts, Chinese chives and Kai-lan greens.

"My style of Chinese home cooking stems from my mother's Cantonese family recipes. The dishes are quick, easy and inexpensive to make, with fresh light flavours. I will show that it is not always necessary to shop at a Chinese supermarket, but using a basic selection of essential Chinese store cupboard ingredients and vegetables, it is easy to make your dishes taste authentic in your home kitchen."

We will make dishes such as:

Small Eats

  • Hot and Sour Soup
  • Steamed Vegetable Baozi Buns

Main Feast

  • Vegetable Chow Mein
  • Sweet Chilli Aubergines
  • Chinese Greens with Garlic and Ginger
  • Black Bean Tofu Puffs with Peppers
  • Smacked Cucumbers and Cloud Ears
  • Egg Fried Rice

Sweet Eats

  • Sesame Tangyuan with Ginger Syrup 

You will learn basic knife skills using seasonal vegetables and how to cut them in the Chinese style.

The day will be a combination of demonstrations and hands on group work, starting with a classic soup and buns, and ending with everyone cooking a selection of my family favourites.

We will finish with a feasting lunch.

You will take home a comprehensive pack of recipes to be able to easily recreate them at home.

      About the tutor

      Lydia is one of our lead chef/tutor and specialises in World cooking and baking and teaches on all our longer Diploma courses.

      Lydia comes from a food loving family and learnt to cook from an early age with her Chinese mother. She has spent all her working life involved with food. She is an experienced and gifted baker. Her sourdough starter is the stuff of legends and we always have a jar tucked away at the back of the fridge. Lydia is an excellent teacher, with a wealth of knowledge and creativity to impart alongside a warm and approachable personality.
