What is the Demuths Advanced Vegetarian Diploma and who is it for?

The Demuths Advanced Vegetarian Diploma is a specially designed course for chefs and non-professionals alike who wish to advance their technical cooking knowledge and extend their skills. We cover all aspects of modern restaurant vegetarian cooking offering our specialized in-depth knowledge of world cuisines. We will cover modern techniques such as smoking, macerating, pickling and fermenting. Make artisan breads and yeasted cakes and pastries. Learn how to get the most flavour from seasonal vegetables. Create complex spice flavours with tempering and infusing. We will focus on modern presentation skills and make desserts using piping skills and sugar craft.

Suitable for those who are confident cooks with a good understanding of basic cooking techniques.  This course is an excellent extension of our Diploma courses and can also be taken as a stand alone course.

Course details

  • The course is limited to 8 people.
  • The class size is kept small to maximize your personal interaction with the tutor and to ensure you have as much hands on experience as possible. You will be working individually and in a pair, along with skills demonstrations from our chef tutor.
  • On each day you will prepare and cook 6 to 8 recipes depending on the complexity of the day. You will receive an explanation or demonstration of the technique of each dish and then be expected to complete the dish successfully within an allotted time, with support from the tutor.
  • You will receive feedback from our chef tutor and official sign-off on each successfully completed day. You will receive a workbook of recipes including a glossary and all technical information covered in the course.
  • You will eat some of what you make for lunch and be able to take home the rest.
  •  You will receive a Demuths Advanced Vegetarian Diploma certificate after the course has been successfully completed.

    About the tutor

    Helen is Demuths co-owner and Head Chef. She has led the teaching at the school for 8 years having previously been Head Chef at Demuths restaurant, a post she filled for 5 years. She is a trained chef and has trained in classical French cooking and is now an expert in Vegan cookery training, also an expert in knife skills and chefs tips. She enjoys the creativity of plant-based and vegan cooking, lifting vegetables to the central position, they deserve in our diets.
