Richard Buckley from Acorn Restaurant, Bath, will teach you how to make dishes from his creative vegan cookbook 'Plants Taste Better'

Course Details

On the day we will cook a classic three course meal showcasing advanced techniques used in his popular Bath restaurant. 

A likely menu on the day will be: 

  • Pistachio pate with carta di musica and orange and majoram salad
  • Hazelnut Roast with salt baked celeriac, cider poached apple, potato gallette and cider gravy
  • Olive oil chocolate pots with rosemary chocolate crumb and raspberry sorbet

Expect to learn about modern setting agents, smoking, fermentation and sorbets as well as a host of professional tricks and classic techniques. 

We will finish with a 3 course meal and you will leave with lots of chefs tips and a comprehensive recipe pack so that you can recreate everything you have learnt at home.
