A day with Richard Buckley from Acorn Vegetarian Kitchen, Bath, designed to teach you how to bring simple tricks and ideas from the professional kitchen to your home cooking.

Course Details

On the day we will cook a classic three course meal from the Acorn menu showcasing the most popular dishes and techniques that make this little restaurant in Bath so popular. 

A likely menu on the day will be: 

  • Carrot and cashew pate with oven roasted carrots, spelt crackers and seasonal pickles. 
  • Smoked field mushroom in a rich mushroom demi glace with sauerkraut, potato galette and seasonal greens.
  • Acorns legendary salted chocolate caramel tart with peanut butter sorbet. 

Expect to learn about modern setting agents, smoking, fermentation and sorbets as well as a host of professional tricks and classic techniques. 

We will cook and eat a 3 course meal and you will leave with a comprehensive recipe pack so that you can recreate everything you have learnt at home.

    About the tutor

    Richard is founding chef and owner or Acorn Vegetarian Kitchen in Bath, winner of VIVA! awards best restaurant and Good Food Guide listed since the year it opened. 

    Richard’s philosophy is that plants should be treated as the stars of the meal and should be cooked to the highest standards using a combination of classic technique, modern tricks and ancient traditions. 

    Richard has self published two small books and will be publishing a full book with Jacqui Small in spring 2018.
