Using gram flour is a great way to make a vegan mayonnaise. Of course mayonnaise is incredibly versatile and goes well with pretty much everything but here we add big flavours to transform it into a punchy tartare sauce. Find the recipe below.

Gram Flour Mayonnaise

Ingredients

225ml cold water

50g gram flour

½ tsp salt

2 tbsp lemon juice

2 tsp Dijon mustard

150ml sunflower oil

Method

  1. Into a small saucepan sieve the gram flour and the salt into the water and bring to the boil. Turn down the heat and whisk for a few more minutes until the mix has thickened to a paste.
  2. Scrape the paste into a small dish and chill in the fridge till cold.
  3. To make the mayonnaise, place the cold paste into a blender or hand held blender jug, and add half the lemon juice and mustard.
  4. Blend the mixture to combine, then gradually add in the oil 1 tablespoon at a time until thick and creamy. Taste and season with more salt or lemon juice if required.
  5. If the mix is too thick, add 1 tablespoon of boiling water and whisk until smooth.

Tartare Sauce

Ingredients

1 garlic clove, finely crushed

1 tbsp capers, chopped

1 tbsp cornichons or gherkins, finely chopped

1 small shallot finely diced

1 tbsp fresh chives

1 tbsp fresh parsley or dill

4 tbsp vegan gram mayonnaise

2 tsp lemon juice

Freshly ground black pepper

Method

  1. Crush the garlic and make sure the capers, cornichons, shallot and herbs are finely chopped.
  2. Place the chopped ingredients in a bowl and mix in the mayonnaise, lemon juice and mix.
  3. Add salt and pepper to taste.
