Dukkah
Dukkah is an amazingly versatile mix of nuts, seeds, and dry-fried spices. As a garnish it can transform many vegetarian dishes, such as hummus, salads, roasted veg, mash, soup - really just about any anything! It also makes a terrific homemade gift, so make extra and spread the joy of dukkah!
Dukkah
Ingredients:
- 100g pistachios-shelled weight, unsalted
- 25g pumpkin seeds
- 25g sesame seeds
- 1 tsp coriander seeds, dry fried and roughly ground
- 1 tsp cumin seeds, dry fried and roughly ground
- 1 tsp sumac (or paprika if you don’t have sumac)
- a good pinch of Maldon salt
Method:
- Heat a large frying pan and toast the pumpkin seeds until they have swelled up, set aside in a bowl.
- Add the sesame seeds to the hot pan and toast for a couple of minutes or until they are golden.
- In the same pan dry fry the coriander seeds and then the cumin seeds until fragrant.
- Whizz the nuts, spices, salt and seeds up in a food processor or pound in a pestle and mortar to a loose bread crumb consistency.
