Damson Membrillo

We like to make this membrillo with wild damsons, a forager's favourite and a highlight of our foraging workshops. Damson membrillo is particularly delicious with with ewes cheese from Homewood Cheeses.

Damson Membrillo

Ingredients:

  • 2 kilos damsons
  • 200mls water sugar

Method:

  1. Put the damsons and water into a large pan and simmer gently until completely broken up.
  2. Push through a colander and weigh the pulp. For every 400g of pulp add 350g caster sugar and return to the pan.
  3. Cook until very thick and a line is drawn when a spoon is drawn through the pan. Pour into a container to set.

These Swedish potato dumplings are normally stuffed with meat. For a simple vegan dumpling we make them without the stuffing
