Damson Membrillo
We like to make this membrillo with wild damsons, a forager's favourite and a highlight of our foraging workshops. Damson membrillo is particularly delicious with with ewes cheese from Homewood Cheeses.
Damson Membrillo
Ingredients:
- 2 kilos damsons
- 200mls water sugar
Method:
- Put the damsons and water into a large pan and simmer gently until completely broken up.
- Push through a colander and weigh the pulp. For every 400g of pulp add 350g caster sugar and return to the pan.
- Cook until very thick and a line is drawn when a spoon is drawn through the pan. Pour into a container to set.
