Cranberry Relish

Cranberry Relish

Serves: 6

Dietary: Vegan

Ingredients:

  • 225g fresh or frozen cranberries
  • 4 cardamom pods
  • 1/2 cinnamon stick
  • 2 cloves
  • 2 star anise
  • 100g caster sugar
  • 1 lemon, peel and 1/2 the juice

Method:

  1. Place the cranberries in a saucepan and just cover with water, not enough to let the berries float.
  2. Add the spices. If you don’t want to pick out the spices out later, tie them up in a square of muslin. Add lemon peel and bring to the boil.
  3. Simmer slowly until about half the berries have popped.
  4. Stir in the sugar and lemon juice.
  5. Simmer on a low heat, stirring often, until all the sugar has dissolved and the relish has thickened.
  6. Serve cold.

Tips: Keeps in the fridge for a week or two.
