Cranberry Relish

Cranberry Relish
Serves: 6
Dietary: Vegan
Ingredients:
- 225g fresh or frozen cranberries
- 4 cardamom pods
- 1/2 cinnamon stick
- 2 cloves
- 2 star anise
- 100g caster sugar
- 1 lemon, peel and 1/2 the juice
Method:
- Place the cranberries in a saucepan and just cover with water, not enough to let the berries float.
- Add the spices. If you don’t want to pick out the spices out later, tie them up in a square of muslin. Add lemon peel and bring to the boil.
- Simmer slowly until about half the berries have popped.
- Stir in the sugar and lemon juice.
- Simmer on a low heat, stirring often, until all the sugar has dissolved and the relish has thickened.
- Serve cold.
Tips: Keeps in the fridge for a week or two.
