About Us, Our Story & The Team

Here at Demuths Cookery School our passion lies in plant-based cooking.

Offering a wide variety of classes, across different cuisines and skill levels, we inspire vegan ways of working with food.

Our aim is to impress people with the variety and flavour of plant-based dishes, using fresh, locally-sourced and seasonal produce and encourage students, giving them confidence to recreate dishes at home, impressing friends and family.

We are based in the very centre of Bath, a beautiful Georgian city, and from our kitchen we have stunning views of Bath Abbey and Parade Gardens.

Our Story

Demuths Cookery School was established in 2001 by Rachel Demuth, then owner of the renowned Demuths Restaurant. The restaurant had been a household name in Bath since the 80s.

Initially Rachel taught classes in her own kitchen, before moving to our current home in the centre of Bath in 2011. The move out of Rachel's home and into a purpose-built space allowed us to expand what we were offering, specifically our 4 week Vegan Diploma programme - the first of its kind.

A pioneer of plant-based cooking, Rachel retired in 2019 and now Helen and Georgia carry on the Demuths legacy.

Our Ethos

We believe food is a pleasure to cook, eat and share.

Everything we cook is vegan.

We believe a vegan diet is good for us, animals and the planet.

We pride ourselves on the ingredients we use. We aim to use sustainable, seasonal, local, organic, fair trade and eco-friendly products wherever possible.

We support other local independent businesses.

We reduce, reuse and recycle and encourage all of our students to travel to us by public transport.

Our Team

Helen - Co-owner & Head Chef

After working as Head Chef at Demuths Restaurant for 5 years, Helen starting teaching here at the cookery school, something she has now done for over 10 years.

Vegetarian since childhood, Helen trained in classical French cooking and is now a vegan expert. She loves the creativity of plant-based cooking, lifting vegetables to the central position they deserve in our diets.

Helen enjoys the artistic side of cooking, producing beautiful plates of food but her real passion lies in baking and creating all things sweet.

Lydia - Lead Tutor

Lydia comes from a food loving family and grew up with her mum's traditional Chinese cooking. She has a wealth of knowledge from her 30 years culinary experience, across a wide range of different roles including running a bakery, a deli, and a location catering business (feeding well-known actors and musicians!). Lydia has been a part of the Demuths family for 7 years now.

Lydia loves to share her passion for food and the food she loves to cook and teach the most, tends to be inspired by the cuisines of the Mediterranean, the Middle East, Asia and Far East Asia, all of which have some of the very best plant based dishes in the world.

Matt - Lead Tutor

Matt has over 20 years experience cheffing in restaurants across Bristol and Bath. He enjoys sharing with students the knowledge he has gained over the course of his varied career.

Matt spends hours experimenting and recipe testing new ideas for flavourful creative vegan dishes that are nutritious and could win over any meat eater.

TJ - Nutritionist

TJ is our in-house nutritionist, founder of Meat Free Fitness and author of 'The Plant-Based Power Plan', a best seller. Passionate about inspiring others to give up eating meat, he uses scientific-based evidence to debunk any myths about the vegan diet.

TJ runs nutrition classes as well as workshops on our Level 2 Vegan Diploma course.

Flo - Assistant Tutor

Flo is the latest member of our small team. Flo has been a chef for just over 3 years since leaving university and has learnt many different skills from her time spent working the pastry section at a vegan fine dining restaurant to working at a bakery specialising in sourdough. In her spare time Flo enjoys tending to her vegetable garden as well as foraging.

Simi - Assistant Tutor

Simi has been teaching the food of the Silk Route at Simi's Kitchen since 2010. She is a cookery teacher, allotmenteer, Iran food tour guide and since the pandemic she has been providing sell out supper club meals in Bath.
Simi enjoys sharing her food heritage in classes, demonstrations, supper clubs, catering and writing. She has been teaching and assisting at Demuths for the past 11 years.

Micky - Kitchen Assistant

Micky is our fabulous kitchen assistant and keeps everyone well fed with amazing Korean food. Micky claims she didn't have much of a sweet tooth before she started working here but we've changed that, particularly with our much-loved chocolate cake!

Georgia - Co-owner

Georgia is co-owner of Demuths, along with Helen. With a background in hospitality, she's the one that keeps everything running and everyone organised. Georgia was raised vegetarian and has been vegan for 5 years now. Whilst she's not a big cook, she loves food and is self-appointed 'Chief Taster' (as long as there's no coriander involved, her biggest hate).
