The cuisine of the Middle East is a delight: zesty vegetable dips, Turkish fataya, aromatic roasted vegetables with sumac, labna cheese rolled in herbs, all using freshly picked seasonal vegetables from Abbey Farm Gardens.
You will learn how to recognise and use the essential spices of the Middle East: cumin, coriander, cayenne pepper, cinnamon, caraway seeds, cardamom seeds, paprika, ginger, allspice, saffron, sumac. We will show you how to use copious amounts of fresh herbs and aromatic flavours such as pomegranate molasses, rosewater and orange blossom water.
During the day we will make a selection of dishes, depending on what we pick on the day such as:
This is a fun and sociable class, starting out with picking our vegetables with lots of tasting and talking, ending with a Middle Eastern Mezze. You'll leave with a full pack of recipes, great memories, plus the experience and confidence to continue your Middle Eastern cookery at home. Bring wellies and raincoats as we will go into the kitchen garden unless very wet!
