This is one of our most popular courses, which now is now full of vegan seasonal recipes. Showing you how to make quick vegan meals that are easy to make and delicious to eat. 

All of our dishes are made from the best of what’s in season, be they our own garden produce, wild food or vegetables from one of our fantastic suppliers, Eades and Castle Farm. 

Course Details

We will show you how to work with tofu, make vegan labna and mayonnaise, lush vegan puddings and much more. We will also focus on essential and unusual store cupboard ingredients, how to achieve a balanced vegan diet and chefs tips to save time and increase your confidence in the kitchen.

The recipes will change with the seasons, so expect dishes such as:

  • Irish Soda bread
  • Squash and pumpkin seed Bissara
  • Socca Pizza
  • Char grilled vegtables & Puy lentil salad
  • Sesame Tofu chips with vegan mayo
  • Beetroot Salad with pickled walnuts
  • Roasted Carrot Falafel with tahini sauce
  • Berry Labna with honeycomb
  • Sticky Toffee Pudding

The course involves a mixture of demonstrations, knife skills and hands-on cookery in small groups, and is led by our experienced chef tutors who can answer all of your quick cooking questions.

We will have a mid day snack and then a late lunch with vegan organic wine or local apple juice. You will go home with a pack of recipes and lots of fast and delicious tips.

Time: 10.00-4.30

The tutors were lovely, helpful & passionate about food and keen to share, not just what we were cooking but about other dishes. So the learning will go on far beyond the class.

I thought the food we cooked was delicious! I was impressed with how well the parts of the main course complimented each other.

About the tutor

Lydia is one of our lead chef/tutor and specialises in World cooking and baking and teaches on all our longer Diploma courses.

Lydia comes from a food loving family and learnt to cook from an early age with her Chinese mother. She has spent all her working life involved with food. She is an experienced and gifted baker. Her sourdough starter is the stuff of legends and we always have a jar tucked away at the back of the fridge. Lydia is an excellent teacher, with a wealth of knowledge and creativity to impart alongside a warm and approachable personality.
