This introduction to traditional Mexican cooking is one of our favourite seasonal courses bursting with hot, complex flavours. Mexican cooking will get your taste buds tingling! Mexican food is renowned for its use of chillies - fresh and dried - and we run this class during the Autumn when the chillies are fresh and ripe.

Course Details

We’ll use a variety of fresh chillies grown just six miles from Bath at The Upton Cheyney Chilli Farm, as well as special Mexican dried chillies, herbs and spices.

  • You will learn how to use different kinds of chillies including jalapeno, poblano, serrano, chipotle, pasilla. We will cover how to prepare, grow, store and cook with both fresh and dried chillies.
  • You will learn about unusual ingredients such as tomatillos, masa harina, sweetcorn husks, quinoa and epazote and you will also learn where to source them.

We’ll make a range of Mexican dishes, for example:

  • Tamales Rellenos de Calabacin
  • Tortillas de Maiz
  • Arroz a la Mexicana
  • Frijoles Negros Refritos
  • Tomatillos Salsa cruda
  • Corn & Habanero Salsa 
  • Chocolate and Chilli Mole Sauce
  • Mexican tequila chocolate pudding

We always choose our recipes based on the season and availability of the produce.

There will lots of eating and tasting during the day and a late lunch to finish served with organic wines or local juices. 

You will receive a pack of all of the recipes we have made during the day so that you can recreate them at home including extra information on chillies and Mexican ingredients.

Rachel Demuth

About the tutor

Rachel Demuth has been a professional vegetarian chef since the early 80s. She was a founder member of Neals’ Yard Bakery in Covent Garden, London and in 1984 opened Broad Street Bakery in Bath pioneering organic, vegetarian and vegan cooking. In 1987 Rachel opened Demuths restaurant, which she owned for 26 years and sold it in 2013 to her Head Chef Richard Buckley. In 2001 she started the Vegetarian Cookery School to teach people how to cook the ‘Demuths’ style of innovative vegetable dishes.

Rachel teaches on many of the cookery courses and specialises in World Flavours & Baking. She was awarded Best Cookery Tutor in 2013.
