Join Colette for more advanced gluten-free and vegan baking and learn the skills to make sourdough, pasta and choux pastry.
This course is taught by expert gluten-free baker Colette Woods. She ran her own bakery in Somerset called Fliip gluten free which makes delicious savoury tarts that are sold in many health food shops and delis in the south west of England. She is an experienced chef and cooked for Peter Gabriel at Real World Studios. Colette became intolerant to wheat and found that by cutting wheat out of her diet, it greatly improved her health.
On the day they will learn how to make a starter for a sourdough followed by making a sourdough from a previously made batch of starter. Followed by various other artisan breads including a brioche. We will make a vegan gluten free pasta and with the recipe make lasagne for our lunch and in addition will make ravioli and tagliatelle with a sauce. We will make a choux pastry to make into chocolate eclairs and mushroom gougere. We will make a few nut cheeses which will will use throughout the day. All topped off with a delicous rich chocolate mousse cake

The course involves a mixture of demonstration and hands on cookery in small groups with time to discuss your gluten free diet.
We will have snacks through out the day and lunch with salads to complement the bakes with organic wines or juice.
You will receive a recipe file at the end of the day so that you can recreate the dishes at home.
