This course is designed to take the mystery out of gluten free baking. The foods that are missed on a gluten free diet are mainly freshly baked bread and pastry. This course will show you how to put these delicious treats back into your daily life.

Course Details

This course is taught by expert gluten-free baker Colette Woods. She ran her own bakery in Somerset called Fliip gluten free which makes delicious savoury tarts that are sold in many health food shops and delis in the south west of England. She is an experienced chef and cooked for Peter Gabriel at Real World Studios. Colette became intolerant to wheat and found that by cutting wheat out of her diet, it greatly improved her health. 

On the day we will cover the best gluten free flours and their different properties. You will learn about the many flour blends and their uses. You will also learn about different raising agents and healthy fats and sugars.

We will make gluten free and vegan bakes such as:

  • Whole grain bread
  • Pizza with various toppings
  • Flatbreads
  • Crackers
  • Short crust pastry
  • Empanadas 
  • Raspberry chocolate truffle tart 

The course involves a mixture of demonstration and hands on cookery in small groups with time to discuss your gluten free diet.

We will have snacks through out the day and lunch with salads to complement the bakes with organic wines or juice.

You will receive a recipe file at the end of the day so that you can recreate the dishes at home.

So delicious and surprisingly easy to make. We have all learnt so much and had fun. A brilliant day all round!
