What is the Demuths Vegetarian Diploma and who is it for?

The Demuths Vegetarian Diploma is a specially designed course for chefs and non-professionals alike who wish to deepen their technical cooking knowledge and perfect their skills. We cover all aspects of non meat-based cooking, aligning to the national qualifications offered by catering colleges, as well as offering our specialized in-depth knowledge of world cuisines.

How is it run?

This modular course, covers the full range of techniques required to be a highly accomplished chef.  It is taught over a 2 week period and run 3 times a year. You will receive a Demuths Diploma certificate after all 4 of the modules have been successfully completed.

Week 1

  • Module 1 - stocks, soups, sauces & pasta (2 days)
  • Module 2 - grains, legumes, vegetables (2 days)

Week 2

  • Module 3 - bread (2 days)
  • Module 4 - desserts and pastry (2 days)

Term Dates

Beginning March 2015 –

  • Sunday 15th March 2015 - Wednesday 18th Mar 2015 (Modules 1 & 2)
  • Sunday 22nd March 2015 -Wednesday 25th Mar 2015 (Modules 3 & 4)

Times: 10.00 - 5.00 on Sundays and 9:00am - 5:00pm on weekdays

For non-professionals……

For non-professionals, we aim to increase your confidence with the more technical aspects of cooking and baking, aswell as broadening your horizons of using world flavours.  The diploma can be used to help you launch yourself into the catering world, to help you start your own culinary business or simply to help you broaden your home cooking skills.

For professionals……

For catering businesses wishing to send their chefs for professional development onto our courses, we aim to help increase confidence to consistently prepare cook and finish vegetable dishes to a high standard. Helping your chefs’ capabilities promotes a quick, focused and stable team, increasing productivity, creativity and quality, which leads to an increase in food sales.

Course details

The course is limited to 8 people.

The class size is kept small to maximize your personal interaction with the tutor and to ensure you have as much hands on experience as possible.  You will be working most of the time individually and sometimes in a pair.

On each day you will prepare and cook about 8 recipes depending on the complexity of the day.  You will receive an explanation or demonstration of the technique of each dish and then be expected to complete the dish successfully within an allotted time, with support from the tutor.

You will receive feedback from our chef tutor and official sign-off on each successfully completed module.   You will receive a workbook of recipes including a glossary and all technical information covered in each module. 

You will eat some of what you make for lunch and be able to take home the rest.

Cost of course - £1500 for full diploma, the Diploma can be split: 

Module 1 & 2 for £800

Module 3 & 4 for £800

    All of the recipes must be completed to achieve the diploma; many are vegan but not all. The bread and patisserie module is not suitable for gluten-free individuals.

    About the tutor

    Helen has come from being Head Chef at Demuths, a post she filled for 5 years, in which time Demuths won Best Restaurant in Bath award 2007 and Vegan Restaurant of the Year 2009. She is a trained chef and has trained in classical French cooking, with a passion for French patisserie, also an expert in knife skills and chefs tips. She enjoys the creativity of vegetarian and vegan cooking, lifting vegetables to the central position, they deserve in our diets.
